Hands up if you’re a cookie lover. Better yet – both hands if you’re chocolate-obsessed too (we don’t blame you).

These no-bake choc cookies are the perfect gluten-free treat to nourish your tastebuds with this Easter. Drizzling white chocolate into a cross shape inspired by Easter fav – hot cross buns, this recipe is made without flour, egg or refined sugar.

From the delicious, soft and chewy texture to the chocolate and caramel-like flavour, this recipe is sure to win you over. Calling for ingredients like Medjool dates, ground almonds and raw cacao – make them yours in 20 short minutes.

Want a layer of crunch? Whether almonds, pecans, walnuts or peanuts are your go-to, sprinkle your choice of chopped nuts into your cookie mixture and you’re good to go.

Method:

  1. Pit and soak the dates in warm water until softened.
  2. Meanwhile, in a food processor, combine the ground almonds and cacao powder, and briefly process to combine.
  3. Add the softened dates, coconut oil, vanilla and salt into the food processor. Pulse until all ingredients are well incorporated and you have a sticky cookie dough.
  4. Lay a piece of parchment paper onto a board and scrape out the cookie dough. Top with another piece of parchment paper and using a rolling pin, roll out to a 4-5mm thickness. Pop into the freezer for 10 minutes to harden.
  5. Prepare white chocolate drizzle by melting white chocolate over a double boiler or in a microwave.
  6. Once the rolled cookie dough has firmed slightly, use a round cookie cutter and gently cut out shapes. Lay the cookies on a rack and drizzle them with melted white chocolate.
  7. Optional: Decorate with desiccated coconut, sprinkles or finely chopped nuts.
  8. Enjoy!

  1. Set up a bain-marie by putting a bowl of boiled water on a flat surface and placing your mixing bowl on top.
  2. To your mixing bowl, add the peanut butter, coconut oil, rice malt syrup and cacao powder. Whisk well until completely emulsified and smooth.
  3. Pour the mixture into a lined loaf dish and set in the fridge for 4 hours.
  4. Cut into bite-sized squares and enjoy. Then, store in an airtight container and pop into the fridge.

Choc-covered gooey marshmallows

Gooey marshmallows for a fun treat this Easter? Decorated with your choice of sprinkles or dipped in chocolate, this satisfying choice takes 20 minutes to prepare – not to mention, it’s a great activity to keep little ones’ hands busy.

Packed with gut-loving gelatin to give a soft, fluffy texture – and complimented with raw cacao thanks to its deep, rich chocolate notes – this homemade marshmallow recipe is a nourishing choice that chocolate lovers will appreciate.

  1. Line a 20x20cm dish with baking paper, and lightly brush with melted coconut oil.
  2. In a large mixing bowl, combine the gelatin with ½ a cup of water and set aside to let the gelatin bloom (absorb water).
  3. Meanwhile in a small pot, combine the remaining ½ cup of water with your choice of liquid sweetener (rice malt syrup and honey are a delicious combo) and salt. Heat on medium-high heat and mix until combined. Bring the mixture to a gentle boil and cook for 10-15 minutes (or until the mixture reaches 115°C if you have a candy thermometer).
  4. With an electric mixer running on low speed, slowly stream the hot sweetener mix into the bloomed gelatin. Gradually increase the speed of your mixer and continue to mix until light and fluffy. It will take approximately 10 minutes of mixing. At the last minute, add the cacao powder. Make sure not to over-mix as the marshmallow will begin to set.
  5. Working quickly, scrape the marshmallow fluff into your lined dish and smooth the top with a spatula.
  6. Let sit at room temperature for 1- 2 hours.
  7. Once set, cut into giant squares using a lightly oiled knife, and dust each square with extra cacao powder and cornflour.
  8. Optional (but highly recommended!): Dip marshmallows into melted dark chocolate and decorate with desiccated coconut or sprinkles.
  9. Enjoy as a tasty Easter treat or dunk in a hot chocolate. Store in an airtight container for up to 3 days.
