To get started, you’ll need the starter culture, flour, an oven, and a warm place for your dough to rest and rise (try next to a fireplace, in a hot water cupboard or in the oven on a proof setting around 30°C).

Containing all the necessary equipment, prepare your daily loaf in as little as 15 minutes – with no kneading required! Simply combine flour, artisan salt, and the instant sourdough starter culture with water in a mixing bowl, cover, and allow to ferment and rise for about 20 hours before baking in a covered oven dish.

Ingredients:
- 1 ½ cups rye flour
- 1 ½ cups wholemeal flour
- 1 teaspoon salt
- 1 sachet Mad Millie Sourdough Culture
- 1 ½ cups warm water (30 degrees)
Method:
- Add the flour salt and culture sachet to a large mixing bowl and mix well with a whisk to combine
- Create a well in the middle and pour the warm water into it.
- Mix to create a sticky dough and cover with a damp clean tea towel and let rise in a warm place for 20 -24 hours
- Tip the dough onto a well-floured surface, and with damp hands fold the outside edges inwards forming the dough into a ball. Place back into the bowl, cover and let rise for 2 hours.
- Preheat the oven and oven tray to 230 degrees and place the dough into the centre of the preheated tray and bake for 25 minutes
