Method:

  1. In a small pot, heat coconut cream until just starting to simmer. 
  2. Place shaved chocolate into a medium bowl then immediately pour the hot coconut cream over the chocolate. Mix thoroughly until the chocolate is completely melted. If the chocolate does not completely melt, then place over a double boiler and mix until melted.
  3. Add the collagen powder, vanilla, almond butter and cacao powder. Mix until everything is well incorporated. Chill mixture for 15 minutes.
  4. To make the truffles, using a spoon scoop out portions of the truffle mix and roll it between the palms of your hands to form a ball. Toss into additional cacao powder or superfood berry powder to decorate.
