What’s a better flavour combination than berries and chocolate? A satisfying – yet gut-nourishing choice for your sweet tooth, this black forest inspired slice is refined sugar free and makes a superb post-gym snack when you’re in need of an energy boost.

Starting with a delicious base of oats,  ROAR Organic Hazelnuts Activated and cacao nibs, layered with a sweet berry jelly that’s packed with gut-loving gelatin and drizzled with your choice of chocolate to top things off, this crunchy – yet chewy slice will have you going back for seconds (and we don’t blame you!).

Whether you’re big on meal prep or have a gathering coming up, this simple recipe makes 12 servings – ideal for any picnic, social get-together or afternoon snack that the whole family can indulge in.

This baking essential goes a long way in any pantry. Rich in sweetness yet mild in flavour, it’s a great option that doesn’t overpower other flavours. It also makes an easy swap out with alternatives like honey or maple syrup. Add it to your next raw treat or baked good for a sensational taste that feels good too.

Did you know – gelatin is great for your gut? While it may be more known for setting jellies and desserts, and thickening sauces, this gut-loving collagen comes from animal protein and contains amino acids that are great for including in your everyday diet.


Ingredients:

Method:

For the base

  1. Add the oats, hazelnuts, cacao powder and cacao nibs to a food processor and blitz until everything is broken down and a fine crumb is formed.
  2. Transfer into a mixing bowl and add the melted coconut oil, sweetener and nut butter.
  3. Mix everything together until well combined.
  4. Press into a lined slice tin in an even layer leaving the surface rough. Pop into the freezer to chill.

    For the jelly layer

  5. In a small pot, combine the frozen berries, water, vanilla and sweetener of choice, and gently heat until the berries begin to break down.
  6. Once the berries have completely softened and the mixture is hot, using a fork to crush berries further.
  7. Remove from heat and slowly pour in the gelatin powder while whisking. Continue to stir until the gelatin has dissolved. The mixture will become glossy and start to thicken slightly.
  8. Pour the berry mixture over the chilled base and pop it into the fridge to set for two hours.

    To serve

  9. Remove from the slice tin and cut into slices.
  10. Optional (but recommended!) - drizzle with melted dark chocolate.
  11. After serving, store refrigerated for up to 4 days.
