Coconut and lime ice cream
Combining the sweetness of honey – a delicious alternative to refined sugar, coconut cream, lime and collagen – this refreshing ice cream calls for four simple ingredients, and only takes 10 minutes to prep.
Ingredients:
- 1 can full-fat coconut cream
- 2 limes, juice and zest
- 1 Tablespoon Biohoney Manuka Honey MG300
- 2 Tablespoons Nutra Organics Collagen Beauty - Lemon Lime
Method:
- In a bowl, whisk together the coconut cream, lime zest and juice, honey and collagen powder. Once well combined and collagen has dissolved, pour into a medium-sized container and place into the freezer.
- To make a smoother texture, every 30 minutes or so give the mixture a stir to break up the icicles - this step is not essential but will make the end result a lot creamier. Alternatively, pour the mixture into ice-pop moulds, add popsicle sticks and freeze until solid.

Ingredients:
- 1 cup fresh mango, cubed
- one & 1/2 cups coconut yogurt or yogurt of choice
- 3 Tablespoons Two Islands Collagen Beauty Powder - Mango
- Lime juice (optional)
- Vanilla (optional)
Method:
- Add the mango, coconut yogurt and collagen powder to a high-speed blender and blend until smooth and creamy.
- Pour into ice-pop moulds, add wooden popsicle sticks to the centre and freeze until solid.

Ingredients:
- 1/4 cup watermelon, cubed
- 1/4 cup raspberries
- 300ml coconut water
- 3 Tablespoons Nutra Organics Collagen Beauty - Waterberry
Method:
- Add the collagen powder to the coconut water and mix until collagen has fully dissolved.
- Divide the watermelon pieces and raspberry between the ice block moulds.
- Pour over collagen coconut water mix, add wooden popsicle sticks to the centre and freeze until solid.
