Ingredients:
- ½ cup Chantal Organics Hulled Tahini
- ¼ cup Biohoney's Manuka Honey – or Chantal Organics Rice Syrup
- ½ teaspoon vanilla extract
- 1 lemon, juice and zest
- ¼ teaspoon baking soda
- 1 cup almond flour
- 3 Tablespoons white sesame seeds
Method:
- Preheat your oven to 180°C and line a baking tray with baking paper.
- In a large mixing bowl, combine the tahini, honey (or rice syrup), vanilla extract, and the juice + zest of the lemon. Mix well until the ingredients are thoroughly combined.
- Add the almond flour and baking soda to the bowl. Stir until all the dry ingredients are fully incorporated and a dough forms.
- Scoop about a tablespoon of dough and roll it into a ball between your palms. Roll the cookie dough ball into the sesame seeds until well coated.
- Place the ball on the prepared baking tray. Repeat this process with the remaining dough, leaving a little space between each cookie.
- Once all the cookies are formed, lightly press down on each cookie with the bottom of a glass to flatten them slightly.
- Place the baking tray into the preheated oven and bake for approximately 10-12 minutes, or until the edges of the cookies turn golden brown.
- Remove the baking tray from the oven and let the cookies cool completely.
- Store in an airtight container for up to one week. Enjoy!
