Ingredients:
- 400g tinned chickpeas, drained and rinsed
- ¼ cup Chantal Organics Whole Peanut Butter or nut/seed butter of choice
- ½ cup ROAR Organic Artisan Coconut Sugar
- ¼ cup oat flour or flour of choice
- ½ teaspoon baking powder
- 1 egg
- Pinch of salt to taste
- 2 Tablespoons Radiance Pure Collagen Powder (optional)
- 100g Bennetto Chocolate Original Dark, chopped
*Vegan? Omit the collagen, and use ground flaxseed as an egg replacer
Method:
- Preheat the oven to 180℃ and line a 20x20 cm baking tin with baking paper.
- Add all the ingredients (except the chocolate) into a food processor and blend until smooth.
- Fold in the chocolate chunks - reserving some for the top.
- Pour into the prepared baking tray, top with the remaining chocolate and bake for 20 minutes until golden on the edges.
- Enjoy warm or store in a container for up to 3 days.
