Method:

  1. To make the irish sea moss gel, thoroughly rinse the irish moss seaweed under cold water.
  2. Add the rinsed irish moss to a pot with water and gently simmer on low heat for 30 minutes, stirring occasionally until the seaweed has softened, become gelatinous, and started to break down. Ensure it does not boil.
  3. Blend the mixture until smooth and transfer it to a clean jar.
  4. To make gummies, add water to a pot and sprinkle the agar powder over the top. Let it sit for a few minutes to allow the agar powder to bloom (absorb the liquid).
  5. Place the pot over medium heat and stir until the agar powder dissolves. Bring to a gentle simmer for approximately 2 minutes until the agar powder is fully dissolved.
  6. Remove from heat and quickly add the honey, sea moss gel, and blackcurrant powder. Whisk until everything is well incorporated.
  7. Pour the mixture into a dish or mould, and let it set in the fridge.
