For a classic, refreshing summer salad that will be a hit across the dinner table, you can’t go past this delicious tomato salad. As we head into warmer months, our desire for fresher ingredients and lighter foods is lifted. I love summertime because of the abundance of sweet fresh tomatoes available – plus it’s always fun to find new ways to enjoy them.

Super simple and quick to make, this recipe includes  Wild Dispensary’s Elderberry Switchel – a delightful combination of organic raw apple cider vinegar, wild-harvested elderberries, Otago bush honey, ginger and mānuka. This uplifting tonic brings slightly sour, yet sweet flavours that complement the dish perfectly.

To add a crunchy element to this salad, I’ve used radish and red onion – but feel free to switch it up with other options like cucumber, capsicum or any of your favourite vegetables.

For Antioxidants – Wild Dispensary Elderberry Switchel:

This delicious wild berry is loved for being antioxidant-rich, high in fibre and full of vitamin C. Commonly grown across North America, elderberries have been used for thousands of years due to their highly nutritional properties. Being extremely versatile, elderberry can be used in syrups, tonics, jams and even fermented to make wine. In addition to being a wholesome staple in any diet, they are great as a daily boost of energy.

For healthy fats – Melrose Organic Pumpkin Seed Oil:

Cold-pressed to retain nutrients, pumpkin seed oil is used for a range of culinary profiles such as desserts and salad dressings. Rich in healthy fats, it’s a superb source of poly unsaturated and monounsaturated fats which complement a balanced diet. It’s also full of vitamins and minerals like zincironmagnesium and calcium – all wonderful nutrients for fueling our body.

Ingredients:

Salad:

  • 250g tomatoes
  • 1 handful fresh small basil leaves
  • 2 small radishes
  • 1 small red onion

  1. Pickle the red onion.
  2. Slice tomatoes into wedges - or if using cherry tomatoes, cut in half. Arrange on a serving dish. Gently place pickled onions, thinly sliced radish, and fresh basil on top of tomatoes.
  3. To make the dressing combine pumpkin seed oil with switchel and drizzle over the top. Finish with ground black cumin seed and serve immediately.
