<p>Cacao is made into cocoa through the process of roasting, a process that makes the cacao less bitter in flavour and darker in colour. However, roasting has a downside: it’s estimated that between 60 – 90% of the original antioxidants are lost during the process.</p>
<p>As it is less refined, cacao powder retains almost all this goodness including a huge number of minerals, vitamins, and antioxidants. Incredibly cacao has up to 40 times the antioxidants of blueberries. Flavonoids, which are plant-derived antioxidants are also abundant in cacao. It contains a pretty generous amount of magnesium and is also one of the highest plant-based sources of iron.</p>
<p>Making a warming cacao drink is easy. We like to mix 1 tablespoon of cacao powder, ½ tablespoon of coconut sugar, a pinch of vanilla bean powder, plus a pinch each of cinnamon, ginger and nutmeg and mix with a splash of boiling water to make a paste, then top with hot milk, stir and enjoy.</p>
